Gastronomy in CENTRE VAL DE LOIRE
the tarte tatin
This famous apple tart, upside down and turned over when serving, was born in the Loire Valley, in Sologne. More precisely, this specialty with very soft caramelized apples was born, it seems, from a mistake, in the small town of Lamotte-Beuvron, in the Loir-et-Cher department. For the anecdote, one of the Tatin sisters (who then ran a hotel popular with the local bourgeoisie) would have mistakenly baked an apple pie without the dough, adding it afterwards. Cooking and turning later, this original dessert was a real success, making it a must in French gastronomy... listed as UNESCO intangible heritage since 2015. THE TRUFFE DE TOURAINE Touraine has more than its castles, the Loire, its vineyards, the gelin, the taped pears, the pink pig or golden snout, rillons, rillettes... Macarons and other barley sugars... She also has the Truffle! The true, the unique, the exceptional, the mysterious Black Truffle (tuber melanosporum), known as the Périgord Truffle - sanctified in the Périgord Noir and in many departments of the South of France. Touraine also has quality truffle fields, where over 500 hectares of the most prized black diamond in the world are extracted. |
